By changing a few ingredients over
time, Madhya Pradesh has been able to make the majority of the dishes uniquely
their own. The people from other parts of India who moved to Madhya Pradesh to
settle have also had a significant impact on the cuisine. Bhopal is renowned
for its kebab, biryani, fish, korma, and keema. Milk is used in the cooking of
dishes in Gwalior and Indore. The street food in Indore is also well-known. You
cannot leave Madhya Pradesh without trying the Indore famous food that includes
dal bafla (similar to dal batti), bhute ki khees, sabudana khichdi, Indori
Palak puris and parathas, kusli, imarti, mawa jalebi and mawa bati, poha that
they claim is not at all like the one you get in Maharashtra, and practically
every street food is served with the famous sev, be it ujjaini sev or ratlami
sev. Making these Indori delicacies accessible all across the country and even
globally,
Indore Online provides the feasibility to order snacks online by simply
sitting in your comfort zone.

Despite being a typical Rajasthani
and Gujarati sabji or shaak, Madhya Pradesh residents give Indori Ujjaini Sev
Tamatar Sabji a slight twist. They include milk. If you want to prepare it as a
snack, leave it a little dry. However, you should add a little more milk to
make more gravy if you plan to serve it with paratha or roti. To get the best
flavour and texture, order
Ujjani sev online from Indore Online’s website.

Ujjaini
sev tamatar sabji recipe

INGREDIENTS

1-1½ cups Ratlami Sev

2 tbsp oil

1 large onion, finely chopped

1 tbsp garlic paste

1 tsp ginger paste

½ -1 tsp red chilli powder

¼ cup fresh tomato puree

1 tsp garam masala

½ tsp turmeric powder (haldi)

1 – 1½ cup milk

½ tsp salt

2 tbsp chopped  fresh coriander

INSTRUCTIONS

1. In a pan, heat the oil over
medium heat.

2. Add the chopped onion to the hot
oil and stir-fry it until it turns a light brown colour.

3. Stir-fry the ginger and garlic
paste for a brief period of time.

4. Stir in the turmeric powder.

5. Include salt and tomato purée.
Mix thoroughly.

6. Cook the puree for a couple of
minutes at low heat.

7. Include garam masala and red
chilli powder.

8. Stir in milk thoroughly. Allow
the mixture to heat up.

9. Stir in the sev and simmer for
two to three minutes.

10. Add chopped coriander as a
garnish and serve.

You can eat it with parathas or
rotis or serve it on its own with chopped onion, tomato, and lemon juice on
top.

Tips:

Any variety of Sev is acceptable,
but the thicker variety—not the fine variety—should be used.

For this recipe, try mixing Kashmiri
and hot red chilli powder.

Spices can be adjusted to your
preference.

Avoid cooking it for too long after
adding the sev.

Just before serving the sabji, add
the sev.
